Chapel Windows

This holiday cookie is from a dear elderly woman, Clara, who always used to make them for our church. They were one of my favorites!

2 C. chocolate chips

1/2 c. margarine

1/2 c. chopped nuts (optional)

1 package of mini colored marshmallows

Coconut

Using a double boiler, or microwave, melt chocolate chips and margarine until smooth. Once cooled, add nuts and marshmallows. Then the messy part! Take a large piece of wax paper and spread coconut all over it. Take part of the mixture and make into a roll. It is kind of difficult, so don’t get frustrated if it’s not perfect. Roll the wax paper and twist the ends to keep things in place. Put in freezer to chill. I usually get 2 rolls out of the mixture. Once chilled, use a sharp knife to slice. It will look like a stain- glassed window, and taste delicious!
