This is a recipe that has been around since before I was born. A holiday favorite that my Great Aunt Ethel made.
1/2 C. margarine
1/2 c. white sugar
1 egg
1 tsp. vanilla
3 level Tbsp. cocoa
1 Tbsp. vegetable oil
Combine margarine, and sugar until blended. Add egg and vanilla, mix in cocoa and vegetable oil. Stir until well blended. Drop by teaspoons on a cookie sheet. ( I ALWAYS use parchment paper when baking cookies). Bake at 350 degrees 6 to 7 minutes.
After cookies are cooled, make the frosting.
1 C. powdered sugar
1/2 tsp. almond extract
2 tsp. water.
Combine all ingredients. If stiff, add 1/4 tsp. of water, one at a time. If runny, add 1 tsp. powered sugar at a time. You will want frosting consistency. Frost cookies, and try not to eat just one!
